Cheesy Sausage Breakfast Burritos

 
I am totally a breakfast person. If I could, I’d make a big breakfast every morning. But with 3 young children, it’s just not possible. In fact, the first thing they want in the morning when they get up is to eat breakfast. So if it’s not fast, it’s not happening.

Enter the frozen breakfast burrito. Not only are these burritos great as a breakfast when they are first made, but they freeze beautifully. I found that about 90 seconds in the microwave is all it takes to take them from freezer to table. Not too shabby for a weekday breakfast! I love to cook up a batch of these on the weekend and freeze whatever we don’t eat for breakfasts during the week. It sure does make things easier, and a lot better than eating cereal every day!

Cheesy Sausage Breakfast Burritos
makes 12 burritos

1 lb bulk breakfast sausage
3/4 cup diced onion
12 eggs
8 oz processed American cheese
3/4 cup salsa
12 8-inch flour tortillas

In a large skillet, brown the sausage. When the sausage is almost cooked through, add the onions.

In a large bowl, crack the eggs and whisk together. Pour into the skillet with the sausage. Gently stir until the eggs are mostly set. Add in the cheese and the salsa and stir until the cheese is melted. Remove from heat.

Divide the mixture evenly between the 12 tortillas and roll up into burritos. Serve, or if freezing for later, wrap individually and place in a large, freezer safe ziptop bag.

    Sounds delicious! Might have to make a few so I can easily just pop it in whenever I want some ‘protein’ or just not in the mood for cereal :)
