My son turned 6 months old a few weeks ago. My goal was to have the baby weight gone by the 6 month mark. With 7 pounds still to go, I missed my goal, and decided that it’s time to get serious about eating a little healthier!! The good thing is that eating better does not necessarily mean eating tasteless, boring food.
The minute I saw these Skinny Sloppy Joes online, I knew that it would be a recipe that my whole family would love. Not only are these tasty, but they are packed full of veggies, as well. This is a great way to have a healthier, tasty meal on the table for dinner!
Skinny Sloppy Joes
slightly adapted from Skinny Taste
serves 7
1.25 lbs ground turkey (or lean ground beef)
1 tablespoon seasoned salt
1 carrot, minced
1 medium onion, minced
2 cloves garlic, minced
1/4 cup bell pepper, minced
4 oz mushrooms, minced
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
Heat a large skillet over medium-high heat. Add the meat and break up with a wooden spoon or a potato masher. Add in the seasoned salt and cook until the meat browns. Add in the onion, garlic, bell pepper, and mushrooms and cook until softened. Reduce the heat to medium and add the red wine vinegar and Worcestershire sauce; cook for 5 minutes. Add the tomato sauce and tomato paste and stir to combine. Cover the skillet and reduce heat, and allow to simmer for 5 minutes before serving.

Thanks for the recipe; this will be a new staple for me. I love the flexibility: I can hide a lot of veggies in here. I usually add zucchini to the mix. Works really well with the crock pot too.
