recipe: cheddar herb drop biscuits

I am a Pinterest addict. I just can’t stop. It’s because there is just way too much out there – and Pinterest is such a great way to visually “bookmark” it all. Granted, there is no possible way I’d be able to make everything that I’ve pinned, but it sure is fun!!

There are always things that I see, though, that I want to get right up and make them. These biscuits, originally from Plain Chicken, are one of those things. I pinned them just a couple days ago, and they were on my table with dinner last night.

I changed up a few things, just to use what I had on hand, but these were seriously easy, and seriously delicious. If you struggle to come up with side dishes like I do, you need to bookmark this recipe. It takes very little hands on time, and they are a great way to use any of those herbs you have that are going crazy in your garden right now. But beware – you won’t be able to stop at just one!!

Cheddar Herb Drop Biscuits

Adapted from Plain Chicken

Makes 7 biscuits

1 cup all-purpose flour
2 ¼ teaspoons baking powder
1 teaspoon sugar
½ teaspoon salt
½ cup shredded Sharp Cheddar cheese
2 tablespoons mixed fresh herbs (I used a combination of rosemary, thyme and basil)
¼ cup butter
½ cup milk

Preheat the oven to 450F. Prepare a baking sheet by spraying lightly with cooking spray or covering with parchment paper.

In a large bowl, combine the flour, baking powder, sugar, salt, cheese and herbs. Using a pastry cutter or a fork, cut in the butter until the mixture resembles coarse crumbs. Stir the milk in gently, only until the mixture is moistened.

Drop the mixture, by spoonfuls, onto the prepared baking sheet. Bake in the preheated oven for 15 minutes, or until golden brown.
