As someone who loves food so much, I’m always embarrassed to admit if there is a food that I don’t particularly like. I mean – I should like everything, right?
Growing up, beets were not my favorite. At all. But then again, the only way I ever remember having them is pickled. I know I tried them several times as a child, and then gave up on them when I decided I didn’t like them.
Fast forward many years. You know how sometimes you think you don’t like something, but you don’t really know, because it’s been so long since you’ve had it? Well, my husband and I were at dinner while on vacation, and there was a bowl of pickled beets on the table. I wasn’t even going to try them, because I just knew that I didn’t like them, but my husband wouldn’t stop raving about how good they were. So I tried one. And then I ate another. Before I knew it, my husband and I had finished off the whole bowl!!
Since then, I have discovered that maybe I don’t really hate beets. Maybe I actually like them!! But I still don’t really know how to cook with them, and that is my newest quest. And now is the perfect time to experiment with them, because they are in season!
