One of my latest obsessions is risotto. I had never even heard of it until I started food blogging, and now I love trying all kinds of different versions. There are many different versions that use different kinds of rice and grains, but my favorite rice to use is arborio rice.
Arborio rice is an Italian, short-grained rice. It is perfect for risotto because when cooked, they become creamy and chewy because of a high starch content. Arborio rice is easily found in any grocery store. It is often labeled as Risotto Rice because it is such a popular choice for risotto.
