recipe: cake mix cookies

I am not known to make the same recipes over and over again.  In fact, even when I’m taking a dish somewhere, I even use that as an opportunity to try a new recipe.  Most of the time, it works.  But every once in awhile, I have a total disaster and I’m left in a hard place.  So I always try to have a back up plan.

Every month, my family gets together for dinner.  This month, I volunteered to bring dessert.  I had planned on 2 desserts – I have a lot of family!  And of course, I was trying 2 new recipes.  The first one ended up great.  But the second?  A total disaster.  Thank goodness I had a back up plan!

My back up plan for dessert is often these cake mix cookies.  Super easy to throw together – they only take a few minutes – and they are usually a hit, especially among the kids.  I’ve posted about these on my blog before, but after making these again, I knew I had to share the recipe here!

Cake Mix Cookies

makes about 2 dozen cookies

1 cake mix
2 eggs
1/2 cup vegetable oil
1/2 cup mix-ins (chocolate chips, coconut, m&ms, anything you want!)

Mix all the ingredients together.  Drop by tablespoonfuls onto a greased cookie sheet.  Bake in a 350F oven for about 10 minutes, or until set in the center.

    i have made these forever..red velvet cake mix with white chocolate chips and a drizzle of white frosting zigzagged is great plus the basic vanilla cake mix, with half chocolate chips and half white choc chips, but I use 1 egg and one stick of butter.

    I just made these using a pink lemonade cake mix and put cream cheese frosting on them. Very tasty
