recipe: soft caramel corn

It’s funny that I start thinking of back to school around this time of year.  Only funny because I don’t have kids that are school age yet, so really, there is no back to school here at our house.  But I see the ads on tv, see the aisles of the stores crowded with pencils and notebooks, and that back to school feeling is immediately brought over me. 

So as I was thinking about what to write about today, the thought of back to school kept coming to my mind.  And back to school signifies the end of summer, so I thought I would give you my caramel popcorn recipe – perfect for a movie night with your kids to celebrate the end of summer.  This popcorn recipe was given to me by a good friend many years ago, and I’ve probably made it hundreds of times since then.  It’s the perfect snack for a movie night, or just for when you are craving something sweet.  It comes together quickly, and it’s something that everyone will love!

Soft Caramel Corn

2 bags of microwave popcorn, popped, or about 1/4 cup of popcorn kernels, popped in an air popper
2 sticks of butter (1 cup)
1 cup brown sugar
1 cup white sugar
1/2 cup corn syrup
1/2 teaspoon baking soda

Melt the butter in a saucepan over medium heat.  Add the sugars and corn syrup; stir on medium heat until it comes to a boil.  (Make sure the heat is not too hot – if it boils too soon, the caramel will be grainy.)  Once it starts boiling, boil for 1 minute.  Take off the heat and mix in the baking soda.  Pour over popcorn and stir until coated.

    What a great idea to have a movie night before school starts. I think that’ll be a new tradition! My kids prefer movie night at home to going to a theatre as they get to sit in their pajamas with their pillows and blankets around them.
