celebrate: 4th of July

July 4th is one of my favorite holidays.  We are so fortunate to live in a land with so many freedoms, and I love that we have a day set apart to celebrate those freedoms and the land that we love.  The fireworks, the picnics, and I get chills every time I hear “God Bless America.”  And the food.  Let’s not forget the food!!

These homemade ice pops are super easy to make, and you don’t even have to have any fancy popsicle molds!  I used 3 oz. paper cups, and they just tear off when it’s time to cool off with one of these.  Make them blue and red to celebrate with this weekend.  Kids and adults will both be pleased!

Ice Pops

1 (3 ounce) package fruit flavored gelatin mix (Jello)
1 unsweetened, flavored soft drink mix package (Kool Aid)
1 cup sugar
2 cups boiling water
2 cups cold water
popsicle molds or cups
popsicle sticks

Dissolve gelatin, soft drink mix an dsugar in boiling water.  Stir in cold water and pour into molds or cups.  Freeze until hard.  (If using cups, freeze until firm and then insert sticks, then freeze completely.)
